Creamy Raw Cashew Curry on Cauliflower Rice

A favourite of many of my clients.
This recipe can be varied in many ways. Many of the ingredients are optional and to taste.
You will need 4 cups of any combination of veggies you like to eat raw. Examples and some variations are:
a. Broccoli, tomato, red capsicum.
b. broccoli, red capsicum, sunflower mico greens
c. Zucchini,tomato,mushroom
Make up your own combinations and enjoy.

Curry Sauce

1 cup cashews
6 tablespoons coconut oil
Up to 1 heaped tablespoon of your favourite curry powder. (to taste, because every curry powder is different in flavour and heat.
1/2 to 1 teaspoon salt to taste. Please use a real salt. Himalayan or Celtic.
1 tablespoon agave syrup. (optional)
1 shallot. (optional)
Small amount of ginger and garlic
If you have a powerful blender just put everything in and blend with only as much water to make it thick and smooth.
At this point taste and make any adjustments to make it delicious for you.
