The sundried tomatoes make this a divine meal.
- 2 handful kelp noodles
- handful of sunflower sprouts
- scattering of cos lettuce
a) Mix above in bowl.
- Handful of cubed capsicum
- 2 tomatoes (quartered)
- 1 tsp lemon juice
- 1/2 tsp salt
- pinch of black pepper
- 4 sundried tomatoes
- 1 tbsp olive oil
- (optional) 2-3 drops Young Living essential oil of lemon
b) Food process all Napolese Sauce ingredients until chunky
(If you use a Thermomix, 4 seconds on high setting)
c) Place salad in a bowl
d) Cover salad in sauce
e) Ready to serve
(Optionals: add raw cashews on top, add 1/2 bunch basil to sauce)
